To craft this delightful Blackberry wine, Bordeleau used 100% fresh fruit grown locally, and added 15% oak aged Chambourcin wine to create complexity and balance.
The fruit for this beauitful dessert wine was harvested in November to produce wine with exceptional honeyed flavors and delicious sugars. After pressing sugars in the juice were further concentrated by freezing. The finished wine begins with a full-bodied caramel nose which is interlaced with flavors of butterscotch, vanilla, nectarines, and orange peel, and continues through a lasting and luscious finish. Serve after the main course with fruit-based dessert or with cheeses.
